Observation (CORRECTED DURING INSPECTION): Large pot of soup measured 45C.
Corrective Action(s): Re-heat the pot of soup to boiling and maintain at 60C. If you are not using the soup right away, it must be cooled to 20C within 2 hours and 4 within 6 hours. Chef reheated soup at the time of inspection, will maintain 60C when boiling point is reached.

Observation (CORRECTED DURING INSPECTION): Rice scoop stored in room temperature water.
Corrective Action(s): Rice scoop must be stored in ice water. The scoop and container must be cleaned and sanitized every four hours. Staff prepared ice water at the time of inspection.

- sanitizer measured 200 ppm chlorine
- dishwasher dispensed 50 ppm chlorine at the final rinse cycle
- ice machine in sanitary condition; scoop stored separately
- no obvious sign of pests at the time of inspection
