Observation (CORRECTED DURING INSPECTION): Meat slicer observed to have built-up of food debris above the top guard and along the blade.
Corrective Action(s): Clean and sanitize the aforementioned areas.

Observation (CORRECTED DURING INSPECTION): Observed staff washing untensils with warm soapy water followed by air dry.
Corrective Action(s): Ensure that all utensils and equipment are washed using 2-compartment method. Wash, rinse, sanitize, and air dry. Ensure that the 2nd compartment sink measures at least 100ppm chlorine.

Observation (CORRECTED DURING INSPECTION): Chicken slicer observed to in the handwashing sink.
Corrective Action(s): Ensure that all handwashing sink not obstructed and well equipped with hot and cold running water, liquid soap, and paper towels to ensure adequate handwashing of staff.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottles at 200ppm. 2-compartment sink available for warewashing.
Stand-up cooler measured at 4C. Hot-holding unit measured at 60C.
Ice machine in sanitary condition.
Food are dated.

NOTE: No scoops are to be stored in the dry goods containers.

TO DO: Wall in the kitchen observed to be unfinished wood. Exposed wood must be finished. Corrected by: March 30, 2022.

Overall, facility is well organized.
