Observation (CORRECTED DURING INSPECTION): No sanitizer container or spray bottle was prepared and made available at the start of the inspection.
Corrective Action(s): **Issue corrected at the time of in the inspection** Staff filled a container of sanitizer for in-use wiping cloth. 400 PPM QUAT was detected from the sanitizer container.
Please ensure that a sanitizer container or spray bottle is made available at all time when food is being prepared and/ or served.

Observation: Debris buildup along the coil of the dish sink sprayer.
Corrective Action(s): Clean and sanitize the coil and maintain in a sanitary condition.

Observation: 1. Cardboard noted used to lined the bottom shelf holding equipment such as meat slicer.
2. Caulking around the 2-compartment sink needs to be repaired.
Corrective Action(s): 1. Remove the cardboard. Cardboard may not be used as a liner as all surfaces in the food storage and preparation areas must be smooth, easily cleanable and imprevious to moisture. As per staff, they will likely just make the bottom shelf.
2. As per staff, they have plans to recaulk around the 2-compartment sink.

Routine inspection conducted today:
Handwash station accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0 or below.
All freezer units were at -18.0C or below.
Food stored protected, in the proper storage hierarchy and off the floor.
Frozen food was observed being thawed in the refrigerator unit - excellent.
Drain plugs available for the 2-compartment sink.
High temperature dish machine was able to reach 71.6C at the plate level during the rinse cycle.
No signs of pest activities noted during the inspection.
Overall sanitation and organization satisfactory.
