Observation: Meat trays not properly washed and sanitized. Staff only washing with soap - sanitizing step was skipped.
Corrective Action(s): Discussed proper method of manually dishwashing using 2 compartment sink. Poster provided. Follow instructions on poster.
Obtain sink plug for washing compartment of sink.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Band saw and meat grinder (stored in walk-in cooler) only cleaned once a day (as per staff and owner).
Correction: Band saw and meat grinder must be cleaned and sanitized at the following frequency:
-every 4 hours or,
-after each use (if not being used continuously) or,
-when a different product is used (chicken to beef, beef to pork etc.).

Increase frequency of cleaning and keep a log. Follow manufacturer's instructions for cleaning and sanitizing.
Provide an updated sanitation plan (cleaning schedule) to your Environmental Health Officer by June 7, 2022. .

Follow-up inspection to report PKUR-CEJTJW.

-Bacon cooler registered at 4 C or below - good.
-Meat grinder in walk-in cooler was in a clean condition at the time of inspection.
-Band saw to be cleaned every 4 hours as per staff.
-Sinks kept in a clean condition.
-Cutting boards have been replaced.
-Old equipment removed.
-Storage area organized.
-General sanitation has improved drastically - keep up the good work!

-Sanitation Plan - please submit updated sanitation plan to the Environmental Health Officer. EHO to dop off a template.
-Thermometers required in all coolers.

Reminder: change gloves after handling raw meat. Gloves should be changed between tasks and after handling raw meat. Wash hands prior to putting on gloves.
