Freezers ranged from -25C (chest) to -9C (standing freezer closest to staff washroom)
Hot held products found around 60C
**Garlic butter getting warmed up for use. Had a discussion with cook on site - butter can be held cold (4C) or below, or hot (60C or above) and cooled/reheated one time before discarding
You may use your grill line hot butter for a maximum of two hours before discarding. Small container currently in use. OK
Shipment recently received - products were left on the floor for too long. Please put away products, especially high risk meats, away immediately upon receiving.
Dishwasher in back reached 100ppm chlorine sanitizer residual
Staff on site were assisted in making a food grade sanitizer with chlorine at time of inspection
For dilution:
Use just 5ml of bleach for 1 litre of water, or 1oz for 1 gallon water
Iodine glass washer found at 12.5-25ppm of iodine sanitizer. Good
***Monitoring logs have NOT been maintained. Resume use immediately. Two of your coolers not maintaining minimum temperatures
General sanitation of facility satisfactory.
No evidence of pests
Please remove old equipment that isn't getting used on site (and is collecting dust) - cheese slicer, potato cutter
