Routine inspection conducted:

-Handwash station adequately supplied.
-Refrigeration temperature satisfactory; Hot-holding temperature satisfactory. Rotisserie chickens had surface temperature >60'C.
-Temperature monitoring system in place. No issues observed from recent records.
-200ppm QUAT available in labelled spray bottles and in 3 compartment sink at the poultry area. Automated dispenser at correct concentration.
-General food storage practice satisfactory.
-Professional pest control in place. No evidence of pest activity observed at this time.
-General sanitation level of the department satisfactory at this time.

NOTE: Left prep cooler had ambient air temperature ~ 6'C due to frequent opening/closing. Temperature reading recorded during morning shift <4'C.Ensure to monitor as agreed at this time.
NOTE: Minor ice build-up observed from the stand up freezer unit. Ensure to remove on a regular basis to prevent temperature fluctuation.
NOTE: Extra metal containers stored by rotisserie warmer require cleaning before use.
