Observation:
The high temperature dishwasher had a rinse cycle temperature of 72C(at manifold) and 68C at the plate's surface as per max/min thermometer. The rinse cycle temperature shall be at least 82C (at manifold) and above 71C at the plate's surface to kill germs.
Corrective Action(s):
Immediately call a repair person in to fix the dishwasher and to increase the rinse cycle temperature to above 82C (at manifold). Facility has ability to manually sanitize dishes with Quats sanitizer in sink. Inform staff that once dishes have run through the dishwasher, have them soaked in Quats sanitizer for 2 minutes and then air dried.
Contact our office to schedule a follow-up inspection to ensure the dishwasher is fixed.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezers were -17C or colder; thermometers present; and temperatures recorded daily.
- Glasswasher had [Cl2] of 50ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] above 200ppm.
- Quats sanitizer in spray bottle was 200ppm.
- FoodSafe certified staff present.
- Foods stored in food grade containers; covered; date coded; in groups to prevent cross contamination; and 6" off the floor.
- General sanitation is satisfactory. Ensure the walls & ceiling of the keg cooler are absent of dust; and keep up with the cleaning of food and grease beneath, behind and in-between the fryers and grills.
- No signs of pests.
- Food handlers use utensils to handle foods.
