302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): 1) Knives on the wall next to the 2-compartment sink has crusted food debris - wash utensils with detergent ,rinse & sanitize in a bleach solution 2) operator demonstrated incorrect manual ware wash steps. Detergent & sanitizer were not used. - The following steps are the correct procedures for manual ware washing: 1) wash utensils with detergent 2) rinse with clean water 3) in the second sink , fill a bleach sanitizer solution that is at least 100 ppm. Use chlorine test strips to verify concentration 4) Fully submerge utensils for at least 2 minutes in the sanitizer solution 5) air dry * purchase dish washing detergent Corrective Action(s): Violation Score: 401 - Adequate handwashing stations not available for employees [s. 21(4)] Observation (CORRECTED DURING INSPECTION): - soap dispenser bottle - pump is not working - replace soap dispenser bottle with another bottle.
