Observation (CORRECTED DURING INSPECTION): Bus pans stored on bottom shelf/cupboard in prep area next to two-door upright cooler were not stored in a sanitary manner. Mouse droppings were present in this cupboard.
Corrective Action(s): Wash and sanitize all bus pans stored in this area, and store on a shelf/rack that is higher up off the ground. Keep bottom shelves of cupboards empty.
Staff cleaned and sanitized bus pans and emptied bottom shelves of cupboards at time of inspection.

Observation: Mouse droppings observed along permiters in dishwashing area/storage area, as well as on bottom shelves of cupboard in prep area.
Corrective Action(s): Remove all droppings and sanitize affected areas with a strong bleach solution. Ensure professional pest control company is servicing facilty on a bi-weekly basis, and ensure all possible entry points are properly sealed. Keep bottom shelves of prep area cupboards empty (or free of all food-related items).

Observation: Grease and food debris build-up observed behind/under cooking equipment (frying/grilling area). Cooler door handles in dishwashing/storage area require cleaning and sanitizing.
Corrective Action(s): - Clean and sanitize floors under and behind cooking equipment on a weekly basis. Ensure equipment is pulled out from wall such that areas can be thoroughly cleaned.
- Cooler door handles must be cleaned and sanitized daily.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available in spray bottle at 200 ppm
- High-temperature dishwasher reached 74C at dish surface during rinse cycle
- Both coolers storing food items were measured to be at 4C or colder, accurate thermometers available
- Food storage practices satisfactory
- Ventilation canopy maintained in sanitary condition
- Back screen door in good condition. No holes were present in ceiling. Holes in dishwashing area were sealed with steel wool and/or spray foam - continue to monitor and re-seal as necessary.
- Ensure not to store any clean equipment directly on the floor in storage area.
