Dishwasher installed since previous inspection conducted on July 26, 2019.
High temperature dishwasher measured 76 degrees C at the utensil surface during the final rinse [minimum required temperature is 71 degrees C at utensil surface / 82 degrees C (180 degrees F) rinse water]
No changes to existing equipment or layout aside from the dishwasher installation. Dishwasher installed next to 3-compartment sink.
Wire shelving is in place near dishwashing area for drying of utensils and equipment. Additional shelving may be required depending on quantity of utensils and equipment to be dried.
Temperature records are being maintained for cold holding units. It is recommended to maintain records for dishwasher on a daily basis.
