Observation (CORRECTED DURING INSPECTION): Miso paste sitting out at room temperature in box (opened package) by double door cooler (by the stove range). Staff said this product is shelf stable once opened. You need to provide proof of this if you want to keep this product out at room temperature.
Corrective Action(s): Keep miso paste and do not use until you can provide documentation. If you wish to keep miso paste out at room temperature once it is opened, provide us with proof from the manufacturer that this paste is safe to keep at room temperature (ie. its water activity is <0.85 or its pH is <4.6). Until then, keep all miso paste refrigerated.

Observation: Kitchen had extremely poor sanitation upon inspection.
- Mop sink area had black debris all along the sink basin, underneath it, on the floors, along the walls. This is especially concerning because the mop sink is right beside the mechanical dishwasher where all of your clean dishes are coming out of.
-Underneath your cooking line and along the back wall behind the cooking line had debris and grease buildup
-ALL floors along back walls throughout kitchen need a thorough cleaning.
Corrective Action(s): Correction order issued to clean thoroughly. If premises is not cleaned upon re-inspection, further enforcement action will take place, including closure/ticketing.
