Observation (CORRECTED DURING INSPECTION): Baked bread from Family Bread with meat and cheese was stored at room temperature.
Corrective Action(s): Potentially hazardous foods must be stored at or below 4C to prevent the growth of pathogens and or the formation of toxins. Bread was moved into the cooler at the time of inspection. Operator stated a cooler is on order for the front area. Until the cooler arrives, potentially hazardous baked foods must be stored in one of the other coolers in the store.

Comments

Meat Section:
-Walk-in cooler was at 3C.
-Both meat display coolers were at 4C.
-Chest freezer was at -17C.
-Cooked chicken is made to order on the weekend. Probe thermometer available on-site to verify chicken is cooked to 74C internally.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle labelled and tested at 200ppm to 400ppm.
-Meat saw, cutting table, and grinder sanitized every 2 hours. Equipment broken down at the end of the night for thorough cleaning.
-Roasting oven was clean and sanitary.
-General food storage practices good at the time of inspection.
-General sanitation good at the time of inspection. No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until August 30, 2025.

Store:
-Display cooler was at 4C.
-Both wall coolers were at 4C.
-Front dairy cooler was at 2C.
-Wall freezers ranged from -12C to -18C.
-Chest freezer was at -17C.
-Foods were in good condition and stored off the ground.
-Did not find food items from unapproved sources at the time of inspection.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection. Keep the back door closed after deliveries have been received.
