Observation (CORRECTED DURING INSPECTION): Potato press and meat slicer observed with large extent of old food debris accumulation.
Corrective Action(s): Ensure to completely disassemble equipment for cleaning and sanitizing after each use or at least once every 4 hours.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): One hand sink located on right side of main kitchen prep area had no running water.
Corrective Action(s): Operator reconnected taps of hot and cold water at time of inspection. All handwashing sinks must ALWAYS be equipped with hot running water, liquid soap, and paper towels for proper hand washing.

- All cooler temperatures were measured to be at or below 4C
- Freezer temperatures were adequate
- No hot holding being done at time of inspection
- 50 ppm chlorine detected on final rinse cycle of dishwasher
- Bleach solution available in spray bottle for sanitizing at 100 ppm
