Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Chemical dishwasher had no chlorine sanitizer on the final rinse cycle. Feed line was found to have air.
Correction: Chlorine at 50ppm is required to properly sanitize equipment, utensils, and food contact surfaces. Service dishwasher to ensure it can supply 50ppm chlorine on the final rinse cycle. All equipment, utensils, and dishware must be rewashed and sanitized after the chemical dishwasher in able to supply 50ppm chlorine on the final rinse. Facility has been issued a Public Health Act Closure Order.
Comments

-Follow-up inspection to July 24, 2019. Facility was issued a Public Health Act Closure Order for contravention of Section 17(2) of the Food Premises Regulation BC Reg 210/99. Chemical dishwasher was unable to properly sanitize equipment, utensils, and dishware.
-Chemical dishwasher has been serviced. Chemical feed line had a crack and was unable to dispense chlorine. Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface on the final rinse (minimum 50ppm required for proper sanitizing). Continue to monitor the dishwasher sanitizer concentration and service as needed. If dishwasher continues to be maintained in poor working condition (inadequate chlorine concentration), further enforcement actions will be carried out.
-Facility has updated sanitation plan to including testing chlorine concentration for chemical dishwasher 3 times a day. Facility has also purchased test strips.
-Under counter cooler has been serviced and was cleaning. Cooler unit was at 2C on the bottom and was less than 0C on the top. Continue to monitor the cooler unit and service or replace as needed.
-Facility has updated menu and will need to submit a new food safety plan (food safety plan will include the sushi roll, chicken tenders, one item from the sandwiches, and one item from the mains). Food safety plan must be emailed to the inspector for review. Food safety plan must include critical limits, critical control points, monitoring actions, and corrective actions. Sushi rice which has a pH of 4.2 or less is sufficient to prevent the growth of pathogens and/or the formation of toxins.
-Bar area also has a fruit fly issue which needs to be addressed. Addition attention to cleaning and sanitizing of counters, floors, floor drains, etc will assist in prevent further fly issues. Also maintain alcohol spouts clean and capped at the end of the night.
-Light shield for light fixture in the kitchen is still outstanding. All light fixtures in foods preparation areas must be covered with shatter resistant covers to prevent potential broken glass contamination of foods.
-Conditions of the Public Health Act Closure Order issued July 24, 2019 have been met. Closure Order has been rescinded and facility may reopen for service.
