Observation (CORRECTED DURING INSPECTION): Observation: display cooler at 10C (with probe thermometer). Display cooler contains some potentially hazardous foods which include baked goods and cut up fruit. Door was left open for a while.
Health rationale: Potentially hazardous foods stored above 4C and below 60C are at risk of exponential microbial growth which can cause foodborne illness.
Corrective action: All baked goods were voluntarily moved to the sandwich cooler. The display cooler door was closed tightly and temperature was checked again and the cooler was able to maintain 4C. Ensure temperatures are checked in all coolers frequently and maintained at 4C or lower to adequately and safely store potentially hazardous foods.

Observation (CORRECTED DURING INSPECTION): Observation: Handsink at 2-compartment sink not supplied with hand soap.
Health rationale: Hand soap is necessary for food handlers to adequately wash their hands and prevent contamination to food.
Corrective action: soap was replaced in dispenser at 2-compartment sink. Ensure all handsinks are adequately supplied with soap, paper towel, hot and cold water.

Observation: Observation: Operator Foodsafe Level 1 training expired November 2020.
Corrective action: Foodsafe Level 1 training is required for operators to ensure they are aware of safe food handling practices. Complete Foodsafe Level 1 training as soon as possible.

Observed during inspection:

1) Temperatures:
-All coolers and freezers had available thermometers for regular temperature checking.
-Walk-in freezer at -18C
-Walk-in cooler at 4C
-Sandwich cooler at 4C (top and bottom)
-Hot-holding at soup at 71C
-Domestic freezer at service area at -18C
-Cooler at service area (storage) at 4C

Note: Upright cooler in dishwashing area is still not in use only used to store non-perishable items (i.e. bread).

2) Sanitation:
-General sanitation - good!
-Bleach sanitizer at 100ppm chlorine concentration.
-High temperature dishwasher reaches 71C at plate surface.
-Handwashing station at front service, back prep and in staff washrooms (x2) adequately supplied with soap, paper towel, hot and cold running water.
-Mop sink area kept in sanitary manner.

3) Storage:
-All foods are covered and protected from contamination.
-Ready-to-eat foods separated from raw foods.
-Dry foods stored at least 6 inches off the ground.

4) Pests:
-Pest control company comes in monthly for pest control.
-No signs of pests during inspection.

5) Admin:
-Operating permit visible during inspection.
