Observation: FOH storage room door and BOH dry storage door must be repaired to seal shut when closed.

Corrective Action(s): Operator has put in a work order with the owner to repair the doors. Ensure that the doors are repaired and able to seal shut when closed to prevent rodent entry into and around the facility.

Observation: OUTSTANDING: bowls still found in some dry goods in the BOH dry storage room for portioning bulk goods.
Corrective Action(s): Remove all bowls from bulk foods and sauces. Replace them with scoops with dedicated handles that can be stored in a sanitary manner.

Operator has had the ramen area prep cooler repaired, it is capable of maintaining <4C ambient temperature - good
Salmon skin stored in the cooler and reheated in small portions as necessary - good
door seals around undercounter coolers have been cleaned - good
rodent droppings in the BOH have been removed. Some droppings still found in the boiler room. Ensure that this area is cleaned thoroughly and on a more frequent basis.
