Observation (CORRECTED DURING INSPECTION): Sanitizing bucket at the kitchen area measured with 0 ppm chlorine solution.
Corrective Action(s): Discard and refill the sanitizing bucket with 100 ppm to 200 ppm chlorine solution. Clean and sanitize all food contact surfaces with the newly made sanitizer.

Observation (CORRECTED DURING INSPECTION): Dirty bowl was stored in the sushi bar area hand washing station.
Corrective Action(s): Remove the dirty bowl from the hand washing station. Ensure hand washing station is clear of obstruct and only used for hand washing.

Observation: Debris observed on the floor at the following area:
1. Under the 3 compartment sink
2. Beside the dishwasher.
3. Around the hand washing station.
Corrective Action(s): Clean and organize the aforementioned areas. Follow your sanitation plan for regular cleaning schedule. Correc by: today.

Observation: Dishwasher was observed to be leaking water during operation. Operate stated technician was contacted and will be fixing the leak in 2 weeks.
Corrective Action(s): Fix the leak from the dishwasher to ensure no water is leaked during operation. Correct by: May 7, 2019.

Observation (CORRECTED DURING INSPECTION): Ladder was stored in the kitchen area in between the dishwasher and prep cooler.
Corrective Action(s): Remove the ladder from the ktichen area. Ladder is not required for food processing in the kitchen.

- Freezers (stand-up, chest) maintained at -18C or less.
- Hand washing station in the washroom provided with hot/cold running water, liquid soap and single use paper towel.
- Cooked rice hot held at 69C.
- Miso soup hot held at 68C.
- Low temperature dishwasher registered 73C at the plate level.
- Exhaust canopy maintained in a sanitary condition.
- No pest activities observed.

Note: ensure to maintain temperature logs for all coolers and freezers.
