Observation (CORRECTED DURING INSPECTION): 1. Ten packages of tofu and one insert of raw meat stored in the back kitchen single-glass door cooler measured with an food product temperature of 11C.
2. One package of cutted tofu and one lunch box of shirmp stored at the front beverage cooler measured with an food product temperature of 13C.
3. Sprouts and cooked tempuras stored at room temperature. Food temperature measured at 28C. Staff stated both food stored at room temperature for less than 2 hours.
Corrective Action(s): 1. Discard all aforementioned food immediately. Cold potentially hazardous food must be stored at 4C or less.
2. Move sprouts and cooked tempuras to a the sandwich cooler immeidately.

Observation: 1. Back kitchen single glass-door cooler measured with an ambient air temperature of 10C.
2. Front beverage cooler measured with an ambient air temperature of 13C.
Corrective Action(s): Service / fix the aforementioned cooler to ensure an ambient air temperature of 4C or less can be maintained. Correct by: July 20, 2020.

Routine inspection:
- Other coolers (Double door, 2 under the counter, sandwich and sushi) maintained at 4C or less.
- Freezers (stand-up, chest, bar) functional.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Miso soup and rice hot held at 60C or above.
- 200 ppm chlorine sanitizer available in buckets and spray bottles.
- High temperature dishwasher registered 74C at the plate level.
- Ice machine and scoop maintained at sanitary condition.
- No pest activities observed at the time of inspection.
- Foodsafe requirement met.
- Temperature logs not maintained.. Ensure temperature is properly measured and logs maintained on a daily schedule.
