203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Found thick onion gravy in numerous plastic bins cooling at room temperature - surface temperature 55C
Corrective Action(s): Thick products such as gravies will not rapidly cool in containers this size, even when placed in the walk in cooler. As discussed, purchase ice wands and use them correctly to rapidly cool your products. Remember ice wands are food contact surfaces and must be treated as such. Wash, rinse, and sanitize after each use, and keep them clean in your freezers. Don't overfill with water when freezing as they will crack!

Observation (CORRECTED DURING INSPECTION): Cooked, sliced chicken and paneer found at grill line upstairs at 20C
Corrective Action(s): Keep hazardous food products at 4C or below. These particular products must be held in a prep cooler if in frequent use.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) At start of inspection, jalebi found on top of the display units with no cover or shield. After a few minutes on site, products were moved to a protected display area without being asked.
2) Upon entrance of upstairs kitchen, raw chicken was observed immediately adjacent to fresh spices that were getting prepared.
3) In upstairs walk in cooler, raw chicken observed next to an insert of prepared raw bell peppers.
Corrective Action(s): 1) Keep your sweets (and all other food products) away from potential contaminants. This includes customers!
2 & 3) Process raw proteins away from and at a separate time from other ready to eat products.

304 - Premises not free of pests [s. 26(a)]
Observation: Observed a baby mouse stuck to a glueboard in heating room downstairs. An adult mouse found in a snap trap below mop sink in dishwashing area. Droppings noted behind upstairs walk in cooler, in heater room, sink area, and pizza prep area. A chew hole was found between ceiling and wall in staff washroom.
Corrective Action(s): Mice are thriving in an environment with adequate water and food supply. All possibilities for them to eat and drink must be removed nightly.
Clean droppings and document where they're found. Provide this list to your pest control company.
Have your pest control company increase their visits.

**As discussed, this prep cooler does not currently work for the demands required of it. Consider replacing or refurbishing this machine so that prep items in inserts can be held safely and at adequate quantity.
Chest freezers upstairs ranged from -18C to -26C
Bleach sanitizer found in 3 compartment sink around 100ppm
General sanitation upstairs satisfactory, however MUST be excellent given the current rodent situation. Staff or cleaners must be extremely thorough when cleaning up for the night. Consider pressure washing.
Go through all of your food containers to verify they are pest proof. Leave nothing out!
Downstairs:
Hand wash station supplied with liquid soap, paper towels, hot/cold running water

Bleach sanitizer found in a spray bottle at 100ppm (had not been thoroughly cleaned out after a different chemical use - be careful!!)
General sanitation needs work to remove ALL food debris nightly. Some older debris observed around the sink area (where dead mouse was found)

Pest control report on site for only a few days ago. As noted above, increase their visit frequency. Start documenting where the rodent activity is noted. Provide this list to your pest control company so they can be more effective at doing their job.
