Observation (CORRECTED DURING INSPECTION): 1. Open tin cans of food observed in kitchen, such as pineapples, chilli sauce and condensed milk.
2. Rice scoops were stored in stagnant warm water.
Corrective Action(s): 1. Move food items out of tin cans and into food grade containers. Tin cans will rust and is not safe.
2. Rice scoops should be stored in ice to prevent bacteria growth. Change out scoop and water/ice often at least once every 2 hours.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General cleaning and sanitization required throughout facility. Old food debris and grease can be seen in areas such as walk in cooler, floors, under counters and grills. Some dishes in storage had dust and food debris on it.
Corrective Action(s): Clean, wash and sanitize these areas/items. Correction required in 1 week.

Observation: Garbage bags used to store some equipment and line cutting board surface.
Corrective Action(s): Do not use garbage bags for food processing, storage or lining. Only use garbage bags for garbage. Discard garbage bags. Wash and sanitize surfaces and equipment. Correction required today.

100 ppm chlorine bucket in use.
Dish washer final rinse at 76C at the plate according to min/max probe.
No signs of pests at the time of inspection.
Ice machine is sanitary with dedicated scoop.
Washrooms are sanitary with dedicated hand sinks.

Temperature monitoring for units in use.
Holding units: 2X rice cookers at 61C to 67C, cooler #1 1.4C wonton wraps,
#2 3.2C raw tiger prawns, walk in cooler 3.8C raw chicken, fridge -17C top ice only,
bottom 4C beer and pop only, bar fridge condensed milk at 4C.
freezers #1 -17.3C meat skewers, chest freezer -20.8C prawns.
Note: ensure to keep up with daily logs. Logs stopped in November 2019.
