Comments

- All other hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer solution available at 200 ppm
- Main low-temperature chemical dishwasher dispensed 100 ppm chlorine to dish surface, detected after final rinse cycle
- High-temperature glass washer in kitchen reached 77C at dish surface during rinse cycle
- Bar low-temperature chemical glasswasher dispensed 100 ppm chlorine to dish surface
- All coolers were measured to be at 4C or colder
- All freezers were measured to be at -18C or colder
- All hot held items were measured to be above 60C
- In-use utensils in main cook line were stored in ice - good. *Reminder that in-use utensils are not being stored in sanitizer solution.
- Food storage practices excellent. All food stored off the ground, labelled, properly covered. Good separation of raw and ready-to-eat food items.
- Ice machine observed to be clean. Ventilation hoods were free of grease build-up.
- General sanitation very good
- No signs of pest activity noted at time of inspection
- Temperature records well maintained and up to date. Chlorine test strips available for monitoring dishwasher and bar glasswasher.

Note: Although the second bar hand sink is only in use on certain days/busy times, it must still always be supplied with liquid soap and paper towels.
