Observation: Mouse droppings were observed along the enterance to the dry storage area and inside the mechanical room. Insects were observed on the sticky traps under the shelving units of the dry storage area. Pests can transmit disease and must be eliminated from premises.
Corrective action: Inform pest control company of the recent activities. Clean and sanitize the above noted areas and monitor for new activities. Follow recommendations provided by pest control company.

Observation: Large gap observed under the electrical room door. Door sweep under main double-door enterance to the dry storage area was worn out. Given the observed pest activities in these areas, the above conditions allow for the entry and harbourage of pests. Corrective action: Install door sweeps/weather strips under the double-door leading to the dry storage and the electric room door.

-Facility is HACCP certified since last inspection (Nov 2022)
-Regular environmental sampling done for ATP and Listeria and sent to third party for testing
-Oxonia active used for sanitizer
-Metal detector present in production line
-Hand wash stations equiped with hot/cold running water, soap, and paper towel
-Good employee hygiene
-PPE used by food handlers (shoe covers, hair nets, lab coats, etc.)
-Chest freezer @ -25 deg. C
-Walk-in cooler @ -0.4 deg. C
-Culture chest freezer @ -19 deg. C
-Fermentation room @ 42 deg. C
-Agar powder stored in closed pest proof containers
