Observation (CORRECTED DURING INSPECTION):
- Low temperature dishwasher did not have any detectable chlorine from the final rinse water. The chlorine bucket was half empty and the opening was not covered.
Corrective Action(s):
-Chlorine bucket was replaced to a new one at the time of inspection and after few runs, 50ppm chlorine was detected from the final rinse water. Ensure to cover opening so that the sanitizer is not exposed to air. Dishwasher chlorine level should be checked everyday before restaurant opens.

- All freezers at -18C or below.
- No hot holding was observed at the time of inspection as it was before opening hours.
- Bleach sanitizer was available in spray bottles - measured at 200ppm.
- Low temperature dishwasher measured 50ppm chlorine from the final rinse water.
- Ice machine in sanitary condition - new domestic ice machine was purchased.
