Observation: 1) Premise has made major changes without submitting plans; They installed a two compartment sink, a grease trap and a hot water tank without obtaining approval. Can not read the data plate on the tank as it is oriented towards the wall. Submit plans for the new construction and specs for the new hot water tank. Tank does not fill all three compartments with hot water and so is insufficient.
2) Plumbing changes were made without obtaining approval from the city building department. Referred to the city. New equipment can not be approved unless the city approves the installation.
3) Perishables have been taken out of the pizza prep cooler because it is not working properly. This area is designed for food prep and your pizza prep cooler is required for the safe operation of this business. Repair cooler.

Observation: 1) Installed hot water tank does not have enough capacity to fill 3 compartment sink. Not sure of size or recovery capacity, as data plate is hidden. Request to serve more menu items than pizza is denied at this time. Increase capacity of your hot water system so that you can fill your sinks.
2) Enclosure around hot water tank is raw, unfinished wood. Not cleanable or washable. Requires a smooth washable surface. Also raw wood around grease trap. Re-finish to a smooth washable surface.
3) There is still an unfinished, uncleanable knife holder under the shelf above the chest freezer in the kitchen. Remove it as previously ordered.
