Observation (CORRECTED DURING INSPECTION): "Clean" dishes are stored in dirty areas; uncleanable knife rack, dirty containers, dirty shelves. Clean and sanitize all shelves and other dish and utensil storage areas; Clan and sanitize dishes and utensils before returning them to storage.

Observation (CORRECTED DURING INSPECTION): 1) "Washed" dishes in clean dish areas are dirty - not all food residue has been removed. Clean all dishes and utensils thoroughly EVERY time you use them. Dirty dishes moved to clean dish area.
2) Large stand mixer is caked with old dough. Clean thoroughly at least once per day when used.

Observation: Premise has upgraded sinks without sufficient hot water. New hot water tank can not fill the three compartment sink with hot water. Submit specs for the new tank. Hot water system must be upgraded so that sinks can be filled for proper dishwashing.

101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
Observation: 1) Premise has made major changes without submitting plans; They installed a two compartment sink, a grease trap and a hot water tank without obtaining approval. Can not read the data plate on the tank as it is oriented towards the wall. Submit plans for the new construction and specs for the new hot water tank. Tank does not fill all three compartments with hot water and so is insufficient.
2) Plumbing changes were made without obtaining approval from the city building department. Referred to the city. New equipment can not be approved unless the city approves the installation.
3) Perishables have been taken out of the pizza prep cooler because it is not working properly. This area is designed for food prep and your pizza prep cooler is required for the safe operation of this business. Repair cooler.

Observation: Numerous areas of floors, fridges and shelves are very dirty with old food debris and grime. Clean.

Observation: 1) Installed hot water tank does not have enough capacity to fill 3 compartment sink. Not sure of size or recovery capacity, as data plate is hidden. Request to serve more menu items than pizza is denied at this time. Increase capacity of your hot water system so that you can fill your sinks.
2) Enclosure around hot water tank is raw, unfinished wood. Not cleanable or washable. Requires a smooth washable surface. Also raw wood around grease trap. Re-finish to a smooth washable surface.
3) There is still an unfinished, uncleanable knife holder under the shelf above the chest freezer in the kitchen. Remove it as previously ordered.

Observation: 1) 3 compartment sink is leaking. Repair.
2) Pizza fridge is operating at 7 degrees celsius (no perishables inside). Repair or adjust.

Observation (CORRECTED DURING INSPECTION): Foil pans are very oily, dirty and stored for re-use. Do not re-use foil pans, as they are not designed to be re-used.

Observation: Pizza prep cooler has outdoor thermometers in it. Replace with accurate (NSF certified) fridge thermometers.

Spray sanitizer was far too strong; turned test strip white. Do not use more than 1 tablespoon of bleach per liter of water.
Walk in cooler was very cold; 2 Celsius.
No sign of pests.
Hand sink is stocked and working.
