Observation: 1. Grease & dirt build-up along the walls throughout the kitchen
2. Vent hood is due for cleaning
Corrective Action(s): 1. Deep-clean is required throught the kitchen. Pull out large equipment and scrub the wall & floor where build-up of grease is noted. Grease is a source of food for some pests. DATE TO BE CORRECTED BY: June 14th 2018

- The facility is equipped with hot & cold running water
- Hand sinks are stocked
- 200ppm QUAT sanitizer available in spray bottles
- 50ppm chlorine residual detected at plate's surface for both dishwashers (large unit in the kitchen and small unit in the bar)
- Temperatures of all refrigeration units meet regulatory requirements (<4C coolers, <-18C freezers)
- Temperature log is in place
- Foods are stored in a manner that prevents cross-contamination
- Cut fruits are stored in ice bath
- Ice machines are kept in a sanitary manner
- Pest control in place; no signs of pest activity noted at the time of inspection
- General sanitation and food safety practice is good
