*When back door area where vegetable sink sink is currently located gets renovated, a hand wash station will need to be installed.
*When dry food storage area gets renovated, ensure new shelving is located at least 6 inches up off the floor to allow ease of cleaning
Dishwasher at 71c (At plate level).
Glasswasher at 168F and approx 90-100ppm. Soap dispensed into wash cycle.
All cold holding equipment cold holding at <4c
No pest problems noted.
