Observation: *REPEAT* (Since Sept 2022) Droppings observed in the following areas:
- Under dishwasher
- On and under shelving by trays
Corrective Action(s): Notify pest control company of observed pest activity. Clean and monitor areas for reoccurrence.

Observation: Door frames and various trims are not suitable; either unfinished, or gaps present, making it not easily cleanable, potentially leading to water damage, or not pest proof.
(e.g. interior door frame of door leading from exterior to roti machine room, holes in the wall which allow for plumbing, etc.)
Corrective Action(s): Please have renovations properly finished/sealed. This will allow for easy cleaning, prevent water damage, and prevent entry of pests.

Observation: Various coloured cutting boards observed to have deep marks or discolouration. Deeply scored cutting boards may not be possible to clean and mould or other germs may be growing in the cut.

Routine inspection conducted
*Note* Facility has completed renovations to kitchen. Floors and walls replaced with tile. VP has verbally confirmed there is no changes to layout of facility.
*Note* Facility operates evenings.

Temperatures:
Walk-in cooler: 2.4°C
Upright freezer: -20.0°C

Sanitation:
Handwash station equipped with hot/cold running water, liquid soap, paper towels, and garbage receptacle.
Bleach sanitizer not available at time of inspection; kitchen was not in operation at time if inspection. Educated staff on site on proper sanitizer mix ratio (1 tbsp : 1 gallon of water). Sanitizer measured 100ppm by end of inspection

Storage:
All food items were stored at least 6" off the floor.
Chemicals and cleaners were stored separate from food preparation areas.
Overall sanitation of facility adequate.

General:
Conveyer machine designed to make roti stored in back room.
Several parts pending replacement, including conveyer belt
Please ensure all necessary parts are in good condition and inform your district inspector before use.


In addition to the violations above, the following requires your attention:
Dishwasher not on at time of inspection.
Unit will take time to warm up and cannot be immediately used.
If kitchen staff starts cooking at around 1, someone needs to be in to turn the unit on before staff start operations (~1hr in advance).
If the dishwasher does not work properly, or if the wash and final rinse (santizing) cycles do not reach the proper temperatures, this could result in an immediate closure.
