Comments

NOTE: Pepperoni cheese breads were found in Room Temperature display case. FoodSafety plan for pepperoni cheese breads is missing on site. Pepperoni sticks were found in the cooler and labelled as "KEEP REFRIGERATED". Management unable to provide foodsafety plan or some indications that food item has been approved as "shelf stable". Health Inspector to confirm with Foodsafety plan submitted to office and Head Office for Buy Low Foods that 1) the process has been approved by a Health Authority or 2) that the pepperoni sticks in question are supposed to be "shelf stable" and not potentially hazardous food item. (Food item was moved to cooler unit at temperatures of less than or equal to 4 degrees Celsius and were cooked at 8 am - inspection at noon).

COMMENTS:
- Sanitizer solution at concentrations of greater than or equal to 200ppm QUAT - at sink and in soaking buckets
- Sink plugs available for use
- No evidence of pests
- Coolers at temperatures of less than or equal to 4 degrees Celsius
- Freezer temperatures at less than or equal to -18 degrees Celsius
- Hot holding temperatures at greater than or equal to 60 degrees Celsius
- All soups are cooked in oven and then placed into hot holding unit after fully cooked
- Dishwasher achieving final sanitizing rinse of greater than or equal to 71 degrees Celsius (79 degrees Celsius)
- Handwashing and proper glove use observed
