Corrective Action(s): - Remove droppings and thoroughly clean affected areas.
- Seal plumbing hole beside mop sink to prevent potential pest entry.
- Continue to monitor pest activity. Report new and or increased activity to your pest control service technician.
- Ensure that all areas of the premises are accessible for pest control service.
- Follow all recommendations provided by your pest control service technician.

**Note: One freezer (under panini press) not in use. Not a concern at this time existing operational freezers are capable of meeting frozen storage requirements during peak demands.
- 200 ppm QUATS available for sanitizing food contact surfaces and larger equipment that are not washed and sanitized in the dishwasher.
- Manual 2-compartment sink warewashing and sanitizing procedures reviewed. Drain plugs available.
- High Temperature Sanitizing Dishwasher: 74C at dish surface
**Dishwasher cycle was running 10+ minutes. Please service unit/ ensure that unit is operating per manufacturer's specifications. (Unit data plate states that wash cycle is 120 seconds, rinse cycle is 15 seconds).
- General sanitation of premises appears satisfactory (unless otherwise mentioned).
