Observation (CORRECTED DURING INSPECTION): 4 cleaned knives were stored on a dirty surface (table) below a shelf in the front prep area.
Corrective Action(s): Operator removed the knives for cleaning and cleaned and sanitized the table.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Missing light shields on two fixtures in the dry storage room and three fixtures in the front prep area.
2. 4 containers of meat and 1 large container of broth stored unprotected in the walk-in freezer.
3. A flat of raw eggs were noted stored above chopped green onion and cilantro.
Corrective Action(s): 1. Replace missing light covers/ purchase individual protective light bulb sleeves or change out the bulbs for break-resistance bulbs (e.g. LED light bulbs) to prevent accidental breakage where shattered pieces may become a contaminant to food.

Observation: Fresh mouse droppings noted in the following areas:
- On the sticky trap in the staff washroom.
- On the floor by the back door.
- In the drawer below the cash register.
Corrective Action(s): Change out the sticky trap in the staff washroom. Sweep, clean and sanitize all areas noted with mouse droppings. As per operator, a pest control company comes in once a month for inspection and service. The last report noted was from December 2023. Continue to work with your pest control company in controlling the pest issue.

Routine inspection conducted today:
All handwash stations, including staff washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Rice in the rice cooker was being held warm at 60.0C.
Note: Observed bean sprouts sitting outside the refrigeration unit with a temperature of 17.0C. As per operator, the bean sprouts are only left out to accommodate the busy rush hours and return to a refrigeration unit after 1 hour.
High temperature dish machine was able to reach 188F at the gauge level and 72.8C at the plate level during the rinse cycle.
Sanitizer containers were set-up with in-use wiping cloths. Both containers noted with 200 PPM chlorine residual.
Interior of the ice machine, cook line and deep fryer noted in excellent cleanliness condition.
Overall the facility noted sanitary and organized.
Operator has a valid FOODSAFE level 1 certificate - expires Sep 11, 2027.
