General Comments:
Coolers are below 4 degC
Back chest freezer is at -20 degC; walk-in freezer temperature was -2 degC. Operator is using the freezer as a cooler. Foods in the unit are not kept in the unit for long periods of time. Turnover rate is high.
Rice had not been prepared yet at the time of the inspection.
Dishwasher rinse has 200ppm chlorine. You can decrease this to between 50-100ppm.
Handsinks are fully equipped; washroom sinks are fully equipped
200ppm bleach sanitizer was available onsite
Operator has FS level 1 or equivalent certification
