Observation: Dough mixer, food press, sticks for tandoor were not maintined in a clean condition as food debris was present on them. Operator stated these were used yesterday.
Corrective action: Operator place the sticks, press blade into the 3 - compartment sink. Ensure they are wash, rinse, sanitized and iar dried after each use, sticks every 4 hours and after final operation.

Observation (CORRECTED DURING INSPECTION): Surface sanitizer was not set up at the time of inspection.
Corrective action: Ensure approved surface sanitizer is available for use during operation. 200ppm bleach water bucket was made by the operator.

Corrective action: tight/cover the open dry food product after open. Operator covered the dry food product in a tight-sealed, food grade container.

Observation: Dust, food debris observed on air drying shelving unit, wall tiles behind the 3-compartment sink.
Corrective action: Clean and sanitize the above noted areas.

Observation: Wooden knife rack used to store knives. The rack can not be properly clean and sanitized and disassembled.
Corrective action: Wash and sanitize all knives stored in rack before use. Replace the knife rack with a new knife or magnetic strip can be easily and properly clean and sanitized and is smooth, non toxic, durable and impermeable to moisture. Operator stated these knives will not be used today.

Newspaper was being used to line food trays. A wooden shelf that was uncleaned and can not be made clean.
Corrective action: Discard the newspaper and clean, sanitize food trays. Use food grade liner to line the tray. Newspaper was discarded & trays were placed into the 3-compartment sinks (corrected)
Line the wooden shelf with a non-porous, easily cleanable liner. Clean the shelf on a regular schedule.

Observation: 1) Pizza prep cooler lacks seals on the left side and had broken seals on the middle and right side. Operator stated they had ordered seal that are expect to arrive in two weeks.
2) Chest freezer measured at -25C ambient temperature.
Corrective action: 1) Replace the seals at the pizza prep cooler with product that are durable and easy to clean.
