Observation (CORRECTED DURING INSPECTION): 2 containers of leftover soup in Patriot single-door cooler (white) had internal temperature of above 4C. Chicken noodle soup probed to be 6.5C, split pea and ham soup probed to be 7.0C.

- Both items were discarded at time of inspection.
- Please ensure all food items intended for cold storage are able to achieve and maintain and internal temperature of 4C or colder.

Observation (CORRECTED DURING INSPECTION): Wiping cloths used for food contact surfaces observed on countertops and hanging off spray bottles.

- A bucket of sanitizer solution was made during inspection to submerge wiping cloths. Please ensure cloths are submerged in a sanitizer solution when not in use. If continuing to use spray bottles instead of sanitizer bucket, suggest to use single-use paper towels rather than linens.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 2 packs of soup base were observed to be thawing at room temperature. Tomato and basil pack had surface temperature of 3C, lamb and spinach pack had surface temperature of 2C. Both had been out at room temperature for 1 hour according to supervisor. **This is a repeat violation from last routine inspection DNGG-BRHSAT on July 14, 2020.

- Soup bases were relocated to cooler.
- According to supervisor, soup bases are often left out at room temperature for 1 hour before placing into the cooler to speed up the thawing process.
- Recommended to thaw soup bases under running water to thaw faster.

Observation: True 1-door freezer is missing a door handle. Appears to have broken off and sharp plastic edges remain.
Corrective Action(s): Repair or replace door handle to prevent injury from the remaining sharp edges.

Observation: Patriot standup coolers (both black and white) were unable to maintain air temperature of 4C or colder. White cooler had air temperature of 6.7C, black cooler had air temperature of 7.0C. Thermometers inside each cooler indicated corresponding temperatures.
Corrective Action(s): Adjust the temperature of the coolers to ensure they are able to maintain an air temperature of 4C or colder even if they are not currently storing food items.

Observation: The following changes to the previously approved floor plan have been observed:
- Prep sink missing from back prep area in kitchen
- Hot water tank in place where the stacking washer dryer is indicated
- 1 standup freezer (2-door) is now a 2-door refrigerator
- 1 standup freezer (2-door) is now a 1-door freezer
Corrective Action(s): Submit revised floorplans to accurately reflect the above mentioned changes. Please send to the undersigned once completed.

- Handsinks supplied with hot+cold water, liquid soap and paper towels.
**Automatic liquid soap dispenser at back handsink was not functioning. Supervisor was aware of it and indicated that Ecolab has been notified to replace it. Staff are using the front handsink for handwashing.
- Low temperature dishwasher has 100ppm chlorine residual for sanitizing.
- Ice machine maintained in sanitary condition. Ice scoop noted stored outside of the machine.
- Dry storage satisfactory. All food items are stored at least 15cm above the floor.
- Temperature and sanitation logs maintained.
**please add the 2 Patriot standup coolers to the list.
- 200ppm QUATS sanitizer detected from spray bottles. Diluted solution is obtained from dispenser at mop sink.
- General sanitation satisfactory.
- No signs of pests observed at time of inspection.
- Pest control devices noted on site. Services are provided by Abell.
- Staff on site with valid FOODSAFE certification (valid until January 5, 2024).

Signature not obtained due to COVID-19. Report will be emailed after reviewing observations with supervisor on site.
