Observation (CORRECTED DURING INSPECTION): Chicken wings, nuggets, corn dogs, and a wrap ranged from 41C to 54C. Food items were made more than 2 hours ago.
Corrective Action(s): Hot potentially hazardous foods must be stored above 60C to prevent the growth of pathogens and or the formation of toxins. If potentially hazardous foods are stored below 60C, records must be maintained indicating the following:
-Food items
-Time the item was placed in the hot holding units
-Whether the food was sold or discarded after 2 hours.
Food items which are below 60C and no records are present, will be discarded.
Items were discarded at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Chest freezers (back) were at -20C and -24C.
-Domestic refrigerator/freezer were at 3C/-22C.
-Ice cream freezer was at -20C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plug available.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer was at 100ppm.
-General food storage practices good at the time of inspection. Foods stored off the ground and labelled. Food and non-food items properly stored.
-Individual baked foods are properly protected in plastic wrap.
-Facility is not offering self-service coffee at this time.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station equipped with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 equivalent valid until May 13, 2025 (Canadian Institute of Food Safety).
