Observation: 1. Dishwasher malfunctioning, final sanitizing rinse at 0 ppm. Dishwasher sanitizer pump primed, solution dispensed. Dishwasher run for four cycles, final disinfecting rinse at 0 ppm.
Dishwasher heavily soiled, dark particulates observed at chemical injection point and on dishwasher doors.
2. Sanitizer to be available for use to disinfect food contact surfaces. Sanitizer bucket kept under 2-compartment sink, solution is not accessible for use. Sanitizer not available at sushi preparation station,
Correction: Service and clean dishwasher components and ensure final sanitizing rinse at 50 ppm Chlorine.
