Comments

Another chef on site
Discussed proper cooling of foods - a ice wand has been purchased and is on site for use. Good
**Remember to always freeze upright, and never fill past the fill line.
**Keep the ice wand cleaned and sanitized as it will be contacting foods directly
Scoops have NOT been checked and replaced as requested. A used metal tin was discarded by EHO at time of inspection
**Go through your dry bins - first run scoops through the dishwasher. Replace any containers with proper scoops, and store them in a clean and sanitary manner outside of the actual product.
Some cleaning and organizing has occurred. Please continue with this trend
Temperature monitoring records have not been started. Use a log sheet to check your refrigeration systems and dishwasher at least daily
