Comments

- Temperature Control: Monitoring is required to be conducted. Gauges noted. Room Temperature monitoring and tracking is being conducted on site.
- Manual Dishwashing: .
- (4 Step Method) Quat sanitizer.
- Ensure all food contact surfaces are being washed and disinfected after use. All items are to be stored in a manner in order to prevent post contamination. (high vs lower shelves, etc)
-> Wiping cloth storage: Ok.
- Cloths used on food contact surfaces are to be stored in a sanitizer at all times. Cloths are to be kept completely submerged. Limit the number of cloths being used.
- Food Storage: All items/ingredients are to be stored in covered, food grade containers.
- Chemical storage: Spray bottles are to be kept clearly labelled at all times. All items are to be stored in designated areas.
- Sanitary Facilities: Area in front of handsink is to be kept accessible at all times. No items are to be stored in front of hand sink.
- Staff illness/hygiene: Discussed.
- Sanitation: Facility is required to be kept clean and organized. Ensure "hard to reach" areas are cleaned on a regular basis. (ie: Below/under equipment, etc.)
- Garbage, Recycling and Composting Storage: Items are to be kept stored in covered, rodent proof containers.
- Pest Control: Monitoring is required to be conducted. Pest control reports are kept on site. Please note, sanitation is part of an effective Pest Control Program.
