Observation (CORRECTED DURING INSPECTION): Some knives on knife rack were dirty.
No sanitizer available. Operator prepared chlorine sanitizer during inspection.
Corrective Action(s): Ensure that all utensils and kitchenware are inspected for cleanliness on a daily basis.
Sanitizer must be used to sanitize all food contact surfaces during entire hours of operation, not just at the end of the night.

Cooler under the grill had been shut off. Ensure that the cooler temperature drops to 4C before storing foods inside.
Chest freezer measured <-18C
Foods are stored in pest proof containers, off of floor

Attention:
- Deep cleaning is required throughout the kitchen. Clean walls & hard-to-reach areas.
- You may need additional shelving space for dishes that have been cleaned. Observed piles of cleaned dishes at the corner of the 3 compartment sink.
