Observation: 1. Raw eggs observed stored above vegetables in the walk-in cooler.
2. 2 light fixtures in the kitchen area noted with no shields.
Corrective Action(s): 1. Move the raw eggs to a lower shelf below the vegetables.
2. Purchase shields or individual light bulb sleeves for the light fixtures in case of accidental light bulb breakage that may lead to glasses in food.

Routine inspection conducted today:
Handwash stations, including staff washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Food stored protected and off the floor.
Cooled rice was being reheated in the microwave prior to placing in hot hold unit - good.
Cooked rice noted at 63.0C in the hot hold unit.
Proteins were being thawed in the sink - as per Chef, water is changed out every 30 minutes - good.
Low temperature dish machine detected with 50 PPM chlorine residual.
QUAT sanitizer spray bottles available at the kitchen and server areas - kitchen's spray bottle noted with 200 PPM QUAT, server's spray bottle noted with 400 PPM QUAT.
Excellent cleanliness especially for cooking equipment including fume hood, grill and interior of the ice machine.
General sanitation and organization satisfactory.
No signs of pest activities noted during the inspection.
Staff onsite at the time of inspection has a valid FOODSAFE level 1 certificate.
