Observation (CORRECTED DURING INSPECTION): There was no bleach sanitizer available at the time of the inspection. Staff was spotted rushing to make sanitizer when the inspector arrived. The sanitizer bucket is kept inside the dishwashing sinks because the staff deems the bleach solution to be "chemical" and keeps it away from food handling areas. When asked about how the solution is used, staff said they "keep it in the sink because its chemical"
Corrective Action(s): Staff is aware of the correct ratios to make 200 ppm chlorine residual sanitizer. However, they are not using the sanitizer to sanitize food contact surfaces. 200 ppm chlorine residual sanitizer solution is safe for food contact surfaces. Ensure all food handling areas are wiped down every 2 hours to prevent the growth of harmful bacteria that can get people sick. It is recommended that Food Safe level 1 notes be reviewed by all staff to understand the purpose and correct use of bleach sanitizers.

Routine inspection conducted. Facility is still not open for dine-in. Operating for take-out only.

Temperatures:
- Preparation cooler was maintaining 4 degrees Celsius.
- Double door under counter cooler was holding food at least 4 degrees Celsius.
- Stand up freezer was maintaining -18 degrees Celsius.
- Walk-in cooler was maintaining at least 4 degrees Celsius.
- Chest freezers (x2) were maintaining -18 degrees Celsius.
NOTE: maintain temperature logs for all cooling units.

Sanitation:
- High temperature dishwasher achieved 76 degrees Celsius at the plate surface after the final rinse cycle.
- Hand washing sinks equipped with hot and cold running water, liquid soap, and disposable paper towels.
NOTE: Ensure sanitizer is available in all food preparation areas including the front counter where pizzas are made. *see violation above*
- Ventilation hood in good sanitary condition.
- No pest activity noted.
- cotton cloth used for covering dough racks is laundered off site. Ensure highest heat settings and bleach is used.

Staff with food safe level 1 certification or equivalent is present on site.
