Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available to sanitize surfaces. Solution was made during inspection.
Corrective Action(s): ALWAYS have sanitizer solution ready for use. Keep wiping cloths soaked in the solution. Change solution as needed.

Observation: Mouse droppings noted in food storage area.
Corrective Action(s): - Clean up droppings.
- Keep all foods in pest proof containers i.e. tight fitting lids.
- Store foods 6" off the floor.
- Continue to monitor for activity.

Observation: Prep cooler with drinks and condiments is at 10 degrees C.
Corrective Action(s): Move all condments to a cooler that is able to maintain foods below 4 degrees C. Only return foods here when cooler is repaired.

Observation: Carpeting noted in food storage areas outside the kitchen.
Corrective Action(s): Carpeting is difficult to keep clean. The food storage areas outside the kitchen must comply with regular food storage requirements i.e. all surfaces must be smooth, non-absorbant and easy to clean. Please remove carpeting and finish flooring to meet the requirements.

Temperature of all other coolers and freezers were adequate.
Hot holding was >60 degrees C.
Dishwasher final rinse was 78 degrees C.
Liquid soap and paper towel were present at hand sinks except in the staff washroom. Please replace.
