Comments

Food temperatures in the 'bottom-end' line cooler measure 6 to 7 C. Meats are not being stored in this cooler at this time. The sous-chef was unavailable during the time of inspection to explain the course of action being taken to correct the refrigeration temperature control problem. The manager (bar) on duty does not know what the course of action is, therefor the sous-chef will be called tomorrow to discuss.
