Observation (CORRECTED DURING INSPECTION): Employee washing food utensils in front service handsink.
Corrective Action(s): All dishware and food utensils / equipment must be cleaned and santized in dishwashing sinks in the back kitchen.

Food equipment, food utensils and clean in place food contact surfaces must be manually cleaned and sanitized following the 4 step method; 1)clean surface of debris using warm water and detergent, 2)rinse surface with warm water, 3)immerse for 2 minutes or apply surface sanitizer solution, 4)allow surface or item to air dry before next use.

Storage room has a new shelving unit installed to better organize inventory. Adjust bottom shelf to provide 6 inch clearance from the floor.

Required premise cleaning has been completed.

Wonton process has been revised. Wontons will not be cooked in advance. Wontons will be assembled and stored in the cooler raw and then cooked as needed for customer orders.
