NOTE: Hot holding unit is functional. Owner stated it is not in use as it makes Samosas "Soggy". DO NOT store potentially hazardous food items out at room temperatures. Potentially hazardous food items must be stored COLD, at temperatures less than or equal to 4 degrees Celsius, or HOT, at temperatures greater than or equal to 60 degrees Celsius. DO NOT leave potentially hazardous food items out at room temperatures on counters for lunch rush. Either use the Hot Holding unit as facility was approved to use during initial inspection or move a cooler into the cooking area and store Samosas in cooking area.
