Observation: The Quats sanitizer concentrate ( Suma Final Step) set up at the double sink does not appear to work. No sanitzer was detected even after running hot water through the concentrate bottle for 2 minutes.
Corrective Action(s): Ensure to prepare Suma Final step (quats) sanitizer by diluting the concentrate manually as per manufacturer's instructions. You must have quats sanitizer test paper to test the sanitizer in spray bottles afte mixing. Quats must be at 200 ppm. ( Immediately)

* The rotating arm inside the F'real blender must be cleaned manually every 2-4 hours. At the time of inspection, build up of ice cream mix was noticed on this component.
