Corrective Action(s): Must remove all food and food equipment from staff washroom to prevent possible contamination, until the sewer line has been sealed off completely, (i.e. no possible chance of sewer back up).

Observation: Some cleaning has been done, still have dust build up on the ceiling and food and grease in hard to reach areas under equipment.
Corrective Action(s): Still need to clean ceilings and under equipment to the back walls.

Observation (CORRECTED DURING INSPECTION): 1. Found staff cutting fish on cardboard to remove skin.
2. Found table cloth and cardboard taped to the top of the deep freeze.
Corrective Action(s): 1. ALL food prep must be done and a clean and sanitized cutting board, do not use cardboard for any kind of food preparation.
2. Remove table cloth and cardboard from freezer, can store items directly on freezer and clean/sanitize top as needed. If need to use for food prep, the top can be covered with stainless steel to assist in cleaning.

Observation: Hand sinks in the front had liquid soap in squeeze bottles, which is not easily accessible, and sinks were bull of containers at time of inspection
Correction: Ensure all sinks have liquid soap that is easily accessible and that the sinks are free of containers and equipment.

- Dishwasher has been repaired, final rinse was 50 ppm. Test strips are on site, extra sanitizer is on site as well.
NOTE: MUST check sanitizer concentration EVERY day.
- Wiping rags were in 200 ppm chlorine
- Prep cooler was 1.4 C
- Hand sinks had liquid soap in pumps
- Plastic wrap, newspaper and cardboard was removed from floor, shelving.
- No food cooling at time of inspection
- Indoor dining may resume at this time.
