Observation (CORRECTED DURING INSPECTION): Potato wedges and potato hash on the counter measured at an internal temperature of 18C. Operator stated it was sitting out at room temperature for mroe than 2 hours.
Corrective Action(s): Discard the aforementioned items. Ensure all potentianlly hazardous foods (e.g.: potato wedges and hash) are stored at or below 4C.

Observation (CORRECTED DURING INSPECTION): Meat slicer observed to have accumulation of food debris along the blades and guards.
Corrective Action(s): Clean and disinfect meat slicer. Operator corrected at time of inspection.

Routine Inspection conducted today.
COVID-19 compliance conducted. COVID-19 Safety Plan onsite and posted. Mask policy in place. Physical distancing decals and directional arrows in place. Sanitizer available for customer use. Signage posted at front door to advise people who display COVID-19 symptoms to not enter. Tables and chairs are adequately spaced to maintain proper physical distancing. Plexiglass barrier in place at front till. Contact tracing information of customer collected and retain for at least 30 days. NOTE: Update COVID-19 Safety Plan to indicate maximum occupancy limit of facility. Conduct and document daily health checks of staff prior to commencing work.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine sanitizer buckets measured at 100ppm. QUATs spray bottles measured at 200ppm. Low-temp dishwasher measured at 50ppm chlorine.
Prep coolers, stand-up coolers, and walk-in cooler measured at 4C. Walk-in freezer measured at -18C. Hot-holding units measured at 60C.
No signs of pests observed.
Overall, facility is well organized.

NOTE: De-clutter walk-in freezer by next routine inspection.
