Observation: Small front freezer was at 7.0 C. Small amount of food (few boxes with frozen food and 3 packages with ice cream stored in the freezer at the time of inspection).
Corrective Action(s): Food must be discarded. Repair the freezer.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some debris and single use items on the floor (back area); milk on the floor & blubbery mixed with bread and flowers in the walk-in cooler; so much dust on display shelves. Discarded at the time of inspection.
Corrective Action(s): Organize and clean the entire store.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The hot holding unit is missing a door (no door).
The unit can not keep right temperature in the cavity if the hot holding unit door is missing.
Corrective Action(s): Immediately. remove all food and turn off the broken hot holding case.

The store is messy.(See violation section)
Front hand sink supplied with liquid soap and paper towel; hot/cold running water.
Ice-cream freezers at - 20.0 C.
Walk-in cooler - satisfactory (Note: bit high - please adjust the temperature of the walk-in cooler).
Beverage (pop) - satisfactory.

Recommendations:

Provide to our department - menu items that is going to be sale in the store.
Food safety and sanitation plans.
An operator must provide a copy of FoodSafe Certificate.
If alteration is going to be done to the front area an update floor plan for the front area is required.
All food must be stored off the floor (on pallets or on storage shelves).
Thermometers have to be available in all cold units.
Ice-cream freezers must be cleaned (excessive accumulation of ice).
