302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Chemical dishwasher had a final rinse of less than 50ppm chlorine on the dish surface. Feed line was broken.
2) Both Quats sanitizer spray bottles were measured at less than 200ppm.
Corrective Action(s): 1) Chemical dishwasher must have a final rinse of at least 50ppm chlorine on the dish surface to all for proper sanitizing of equipment and utensils. Feed line was repaired at the time of inspection and chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface. Operator needs to obtain chlorine test strips to verify proper chemical concentration on a daily basis. Rewash all equipment and utensils in the facility to ensure all equipment is clean and sanitary.
2) Quats sanitizer must be at 200ppm to allow for proper sanitizing of food contact surfaces. Sanitizer spray bottles were refilled at tested at 200ppm at the time of inspection.

-Walk-in freezer was at -11C (defrosting).
-Upright cooler was at 4C.
-Prep coolers were at 4C.
-Front bar cooler was at 4C.
-Chest freezer was at -18C.
-Hot holding was greater than 60C.
-Sauces properly cooled and were at 4C.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Raw foods stored below and separately from ready-to-eat foods.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until May 13, 2022.
