Observation (CORRECTED DURING INSPECTION): Cooked food observed stored at room temperature by deep fryer. Deep fried spring rolls observed at 14.9 C and deep fried cod observed at 25.5 C.
Corrective Action(s): Food was discarded. Ensure all cooked food is either held at 60 C or above or 4 C or below at all times to prevent the growth of bacteria. If food is to be held at room temperature during peak times, a method of time tracking the food MUST be available and is held no longer than 2 hours.

Observation (CORRECTED DURING INSPECTION): Deep fried fish held in front buffet warmer observed at 55 C.
Corrective Action(s): Fish was reheated. Ensure all foods held hot are held at 60 C or above at all times to prevent the growth of bacteria and their toxins.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher observed with 0 ppm chlorine. Sanitizer bucket was observed empty. Dishwashing staff not educated in how to maintain the dishwasher.
Corrective Action(s): Staff was shown how to change the sanitizer and bucket replaced. Dishwasher dispensed 50 ppm chlorine after several cycles. All dishes were re-washed. Ensure staff is trained to ensure the dishwasher is dispensing chemicals at the proper concentrations. Contact technician to conduct a service on the dishwasher.

Observation (CORRECTED DURING INSPECTION): No hand soap observed at hand sink in kitchen area by back door. Soap dispenser missing.
Corrective Action(s): Soap was placed at hand sink. Ensure all hand sinks have soap and paper towel at all times so staff can wash their hands.
Repair the soap dispenser by the hand sink, and paper towel holder in staff bathroom protect soap and paper towel from contamination.

Observation: 1. Chicken observed defrosting in bin of water with a hose in the kitchen area.
2. In-use rice scoop observed stored in room temperature water by rice cooker.
3. Various foods in walk-in cooler (onions, pork) observed stored on floor.
Corrective Action(s): To prevent the cross contamination of foods:
1. Corrected During Inspection: Floors and water hose was disinfected with bleach to remove contamination. Chicken was rinsed in clean cold water, drained, and placed in cooler. Water hose is not to be used to defrost foods for it does not provide a proper air gap. Frozen foods are to be defrosted in cold running water in the sink.
2. Corrected During Inspection: All in-use scoops were placed in ice water.
3. All food and food contact surfaces are to be stored at least 6 inches off the floor. To be corrected by: Immediately.

Observation: Chicken observed in bin (stored on the floor) with contaminated chicken water flowing on to the kitchen floor.
Corrective Action(s): Food is to be defrosted under running water inside a sink or defrosted in the walk-in cooler. There is to be a air gap present between the dispensing water and product to prevent cross contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed in the following locations: Under hand sink by back door and in both dry storage rooms. Pest control company has been contacted.
Corrective Action(s): Clean/sanitize with bleach all areas where droppings are located. Wear gloves and mask and remove all rodent droppings. Seal any holes in premises to prevent the entry of pests.

Observation: No backflow device observed on hose in kitchen area.
Corrective Action(s): All plumbing fixtures, including hoses, are to have device to prevent back flow and prevent the contamination of the water system. Hose is not to be used unless a back flow preventer is present.

- Buffet tables observed in sanitary condition
- All hand washing sinks supplied with hot/cold running water and liquid soap
- Ice machine in sanitary condition
- All foods stored in pest proof containers in dry storage area and scoops are stored in sanitary condition
- Hair restraints in use
- Vegetables being washed before use
- Pest control reports available
- General sanitation is satisfactory.
- Screen door in good condition and observed closed during inspection

Corrections Needed
- Temperature records are to be kept of all cold holding and hot holding units to ensure foods are maintained at safe temperatures
- Fan guards in walk-in cooler were observed with dust build-up. Clean fans in walk-in cooler to prevent dust contamination.
